To dye permanently, a dye has to get inside the hair, and to do that it needs to open the hair's outer layer, the cuticle.

Ordinary dyes use ammonia for this, a harsh alkali that swells and forces the cuticle open fast.

It works, but that force is exactly what roughens the hair, dries it out and irritates the scalp, and it is where most of the smell comes from.
